(everyone knows you go to life drawing for the cake, right?)
Mini Marmalade Muffins
(makes 12 mini muffins)
Ingredients
110g plain flour
45g castor sugar
1 tsp baking powder
pinch of salt
30g butter
¼ cup marmalade
1 egg
100ml of milk
1 tsp vanilla essence
Icing
lemon juice
marmalade
icing sugar
Melt butter and marmalade and set aside
to cool.
Grease a mini muffin tin and preheat
oven to 180 degrees.
Sift flour and baking powder into a
mixing bowl and lightly stir in sugar and salt.
In a separate bowl whisk egg, milk and
vanilla essence then add butter and marmalade mixture.
Add to dry ingredients and stir
carefully to combine.
Don't over mix as muffins will be
tough.
Pour in to prepared muffin tin and cook
for around 15 minutes, depending on your oven.
The tops of the muffins will still look
quite pale when cooked so use a cake tester.
Ice when cool (not sure on the exact
amounts so maybe start with juice of half a lemon and a tsp of
marmalade, then stir in sufficient icing sugar with a fork to form a
stiff icing).
